Wonderful recipe Wednesday

Hey everybody, I am going to try something new. I have been thinking about maybe doing a recipe blog, but I am going to try putting some recipes on here first. I'm going to call each post Wonderful Recipe Wednesday. Please comment on these recipes, the more comments I receive, the more recipes I will post. I really enjoy cooking and don't get to do fancy meals with 3 picky, growing boys running around my house, but when the opportunity arises for me to entertain or take food to church, I really enjoy cooking new recipes. And I have this new thing about taking pictures of some of the foods I make. I have put some of them on my facebook page.

These recipes will be foods that I have made and are in my list of meals on my monthly menus. I am going to start off with a sandwich that I made up a few years, and have fallen in love with. Oh my heck, if it made right it is soooo good.

I call it The Pork Tenderloin Sandwich with Sauteed Peppers and Onions.

Ingredients:

1 Pork Tenderloin
Chicken broth, (enough to cover tenderloin in crockpot)
Black Pepper, (however much you like, I like a peppery flavor it add to the tenderloin)
Onions, sliced, I use sweet Vidalia onions
Sweet Red bell pepper, sliced (any bell pepper can be used)
Hoagie rolls
Provolone cheese, sliced



Directions:
I put the tenderloin in my crock pot, add the chicken broth and the pepper, then put it on high and it cooks while I am at church. Or you could cook it on low if you want it to cook while you are at work. After it is done it will just fall apart when you try to pick it up. In a pan saute the onions and peppers in a little olive oil until soft and starting to brown. Shred the pork as you make the sandwiches. I toast my hoagie rolls in the broiler before I fill them. Fill them with the pork, then the onions and peppers, and add a slice of provolone cheese. Then melt the cheese under the broiler. But make sure to watch it, I have a tendency to get sidetracked (can't imagine why with 3 boys running around) and sometimes burn things. :) I use some of the leftover broth as "Au Jus" to dip the sandwich in, and I pair it up with some spicy jalapeno cheddar Pringles.

I think I got it all on there. If you try it and something is missing let me know and I will fix it. I haven't made this in a few months, but now that it is getting cooler, and my life busier I will be using my crockpot more.
